COCONUT CRUNCH COOKIES

  • Free From: Gluten, Wheat, Soy, Sesame, Potato.

Ingredients

  • 75g soft butter
  • 50g soft brown sugar
  • 1 teaspoon Gluten Free baking powder
  • ¼ cup castor sugar
  • pinch of salt
  • 1 egg (beaten)
  • ½ cup coconut
  • 1 teaspoon vanilla essence
  • ½ cup gluten free crushed cornflakes
  • 150g Goodness Me Baking Mix
 Method

  1. Preheat oven to 190oC fan bake.
  2. With an electric beater, beat together the butter and sugars until light and fluffy.
  3. Add the egg and vanilla and beat again
  4. Mix in dry ingredients
  5. Place is small teaspoon lots on cold baking tray.
  6. Bake for 12-15 minutes at 190oC fan bake until golden brown.
  7. Remove from tray and cool on wire rack.
  8. When cool, store in airtight tin.
