Cranberry Almond Biscuits

  • Free From: Gluten, Wheat, Soy, Sesame, Potato.

 

Ingredients: Makes approx 30 biscuits

 

  • 75g soft butter                                                            
  • 50g soft brown sugar                                     
  • ¼ cup castor sugar                                     
  • 1 egg (beaten)                                                        
  • 1 teaspoon almond essence                                  
  • 150g Goodness Me Baking Mix
  • 1 teaspoon Gluten free Baking powder
  • pinch salt
  • ½ cup dried cranberries

 

Method

  1. Preheat oven to 190oC fan bake.
  2. With an electric beater, beat together the butter and sugars until light and fluffy.
  3. Add the egg and almond essence and beat again
  4. Mix in dry ingredients and cranberries
  5. Place is teaspoon lots on cold baking tray.
  6. Bake for 12-15 minutes at 190oC fan bake until golden brown.
  7. Remove from tray and cool on wire rack.
  8. When cool, store in airtight tin.
