DAINTY BISCUITS

  • Free From: Gluten, Wheat, Soy, Sesame, Potato.
Ingredients
  • 75g soft butter
  • 50g soft brown sugar
  • 1 teaspoon Gluten free Baking powder
  • ¼ cup castor sugar
  • pinch of salt
  • 1 egg (beaten)            
  • Red Jam (raspberry/strawberry/plum etc)
  • 1 teaspoon vanilla essence     
  • 150g Goodness Me Baking Mix

 Method

  1. Preheat oven to 190oC fan bake.
  2. With an electric beater, beat together the butter and sugars until light and fluffy.
  3. Add the egg and vanilla and beat again
  4. Mix in dry ingredients
  5. Place is small teaspoon lots on cold baking tray.
  6. Make a depression with the handle of a teaspoon in the top of each biscuit on the tray and place ¼ teaspoon of jam in each depression.
  7. Bake for 12-15 minutes at 190oC fan bake until golden brown.
  8. Remove from tray and cool on wire rack.
  9. When cool, store in airtight tin.
