Gingernutty Cookies

  • Free From: Gluten, Wheat, Soy, Sesame, Potato.

 

Ingredients: Makes approx 30 biscuits

 

  • 125g soft butter                                                            
  • 50g soft brown sugar                                     
  • 3 tablespoons golden syrup
  • 1 teaspoon Baking soda dissolved in 1 tablespoon boiling water
  • 1 & ¼ cups Goodness Me Baking Mix
  • pinch salt
  • 2 teaspoons ground ginger
  • 2 teaspoons grated root ginger

 

Method:

  1. Preheat oven to 180oC fan bake.
  2. With an electric beater, beat together the butter, sugar and golden syrup.
  3. Add baking soda in water. Mix.
  4. Add in dry ingredients.
  5. Roll in teaspoon lots into balls and place on cold, oiled/greased or baking paper covered baking tray.
  6. Press with a damp fork and make a criss cross pattern.
  7. Bake for 12-15 minutes at 180oC fan bake until golden brown.
  8. Remove from tray and cool on wire rack.
  9. When cool, store in airtight tin.
