Easy Pizza Waffles (Makes approx.10)

  • Free From: Gluten, Wheat, Dairy, Soy, Sesame, Potato

Ingredients:

 Method:

 1. Separate egg yolks from egg whites into separate bowls. Set whites aside.
2. Beat together egg yolks and sugar with water, coconut cream (or oil) and vanilla.
3. Add Goodness Me Crêpe and Waffle mix, salt, baking powder and beat together well. Add in any "taste variations" you want to use at this stage.
4. Cover and rest for a minimum of fifteen minutes. (Will keep well overnight in the refrigerator for breakfast baking.)
5. Put waffle maker to heat up to very warm setting.

6. Beat together egg white until stiff.
7. Fold carefully in to waffle batter.
8. When waffle maker has reached temperature, pour approximately 1/3 to 1/2 a cup volume of batter onto waffle iron.

9. Close lid and cook for 3-4 minutes.
10. Cool on wire rack if not serving immediately.
11. Add your favourite pizza toppings and grill to pizza perfection.

Tasty recipe variations

  • Add 3 dried tomatoes cut into 1 x 1 cm and 1 teaspoon dried basil to the mix after step 3.
  • 1 tablespoon grated parmesan or cheddar cheese and 1 tablespoon chopped chives (not dairy free)
  • If you have any leftover, simply freeze and refresh under the grill for use.
